A header gasket seals the joint between the cylinder head exhaust ports and the header or extractor flange. On the LS V8s it's the part that stops exhaust gas leaking at the flange after the headers are bolted up. A steel gasket is built for the constant heat cycling at that joint. It's a consumable — replaced, not reused, whenever the headers come off.
