A V6 has two exhaust banks, so the gasket pattern has to match the VG-series head; this part is cut for that family. It seals the joint between each cylinder head and the extractor (header) flange that bolts to it.
On a V6 every bank needs its flange joint sealed, and the EMG251 is the part that does it on the VG30 and VG33. Clamped between head and extractor, it closes the face so exhaust gas is pushed down the runners instead of leaking out at the joint. A leak there shows up as a tick, lost gas speed, and heat where it shouldn't be — which is why the matched gasket goes on whenever the extractor does.
